International collaborative study on calf rennet and adult bovine rennet – Determination by chromatography of chymosin and bovine pepsin contents

An international collaborative test on a revised draft version of IDF 110A:1987 (Calf rennet and adult bovine rennet – Determination of chymosin and bovine pepsin contents) was carried out on bovine rennets in the autumn of 1995 by members of IDF Group E51 and other interested in order to determine the precision parameters of the method (repeatability and reproducibility). The scope of the method is to determine the amounts of chymosin and bovine pepsin, respectively, present in a sample of bovine rennet (calf or adult). The experimental design and the statistical analysis of the test results were according to IDF Standard 135B:1991 (similar to ISO 5725-1/2). The collaborative trial of the bovine rennet samples gave good results for repeatability and reproducibility, especially when the results were expressed in percentage of chymosin activity, and the precision parameters are now incorporated in the latest version of the international IDF standard 110.Published in
