Whole Grains, Cereal Fibre and the Gut Function

Abstract

This chapter reviews the current knowledge how whole grain cereals and dietary fibre influence gut function and interactions with the gut microbiome. Many studies concerning effects of dietary fibres focusing on a specific fibre type and its effect on gut microbiota, short chain fatty acid profiles and other metabolic effects. There is a close association between delayed gastric emptying and delayed nutrient absorption, which is closely linked to lowered post-prandial peripheral glucose and insulin response. The mammalian gastrointestinal tract is one of the most densely populated microbial ecosystems that exists. Besides the metabolic effects, the gut microbiota helps to protect against infections from enteric pathogens; it influences gut motility and permeability, and furthermore the gut microbiota have an important role for shaping the structure and dynamic operation of the innate and adaptive immune system. Besides their high content of dietary fibre, whole grains are also a rich source of phytate, phyto-esterogens vitamins and minerals.
