Oats full of soluble fibre

Aman, Per; Andersson, Annicaa A. M.

Abstract

During recent years there has been increased interest in oats and in foods made from this cereal, which is rich in soluble dietary fibre (mainly mixed-linkage (1 -> 3,1 -> 4)-beta-D-glucan, in the following referred to as beta-glucan). This perspective paper discusses oats, the health effects of oats, some possible health claims for oat foods and the content, structure and some properties of oat beta-glucan. In the Nordic countries this is a rapidly growing sector within the agro-industrial chain.
